Our products

The products of the Fattoria di Varia are obtained from the cultivation of vegetables, fodder, vineyards and olive groves that come from our land, and from the milk that comes from our Bruna Alpina cow farms. Take a look at the numerous products, all fresh, good and genuine.

Dairy Products

The “Fattoria Di Vaira” brand accompanies different types of dairy products produced and packaged in the company dairy. From here come the seasoned and semi-seasoned cow cheeses such as caciocavalli, caciotte and scamorze; ricotta and the whole line of mozzarella (mozzarelle, trecce, treccine and bocconcini). The cheeses are transformed daily, some stored for maturing on the farm, and can be purchased in the Ecor chain stores and at the supermarket. The milk comes from the Bruna Alpina breed of cattle from our biodynamic breeding.

Fresh Vegetables

The real flagship of the farm, the production of vegetables represents the fulcrum on which most of the activities revolve. The type of soil, highly rich in organic matter, the proximity of the sea, the proximity of other non-horticultural crops, the protection offered by hedges and trees, make the "Fattoria di Vaira" vegetables a unique product in Italy. The winter species: every year about 50 hectares of fennel, cauliflower, Romanesco cabbage, chicory and other different crops are cultivated. Summer productions: tomatoes, peppers, courgettes, melons, watermelons and aubergines occupy around 40 hectares each year. The fertilizations are carried out exclusively with manure composted according to the biodynamic method and through the burial of mixed green manure, both in spring and summer.

Packaged Products

The vineyards cover an area of 40 hectares divided between 30 hectares of rows (Montepulciano, Chardonnay, Cabernet, Falanghina and Merlot) and about 10 hectares of espaliers (Trebbiano, Sangiovese, Falanghina). The processed products are: Quotidiano Line (red, white, rosé) and Colfondo Sparkling Line. A Line of High Quality wines (white, red and ancestral sparkling) will soon be launched. The 18 hectares of olive grove host about 4000 plants of the three most common varieties in the Molise region: Leccino, Gentile di Larino, Moraiolo. To increase the biodiversity of the agro-ecosystem and preserve the soil from erosion, improving its fertility, Di Vaira works the soil to a minimum.

Ecor supply chain

The grains, spelled and legumes grown on our land are part of the Ecor project "The products of the supply chain" together with other Italian biodynamic companies. The ultimate goal of these projects is the sharing of some fundamental values such as the importance of agriculture, the environment, soil fertility and fairly paid agricultural work. The products made are pasta, soft and durum wheat flour, spelled and legumes.
